Ryan,
I took and passed my RHCE about a year ago. I was using
RHCE Study Guide, 5th edition
by Michael Jang
McGrawHill / Osborne
ISBN 0-07-226454-3
as well as the manuals for RHEL 5 from Red Hat:

Basically if you can do everything that's in the Red Hat RHCE Prep Guide -
http://www.redhat.com/certification/rhce/prep_guide/
you should be able to pass.
One of the most difficult things about the Installation & Configuration part
of the test is that the time is quite limited. While a few people including
me were able to complete the Troubleshooting part of the test 30 to 45 min
ahead of time, I don't think anyone was able to complete all of the
objectives of the I&C part on time. You just have to pick and choose which
objectives to complete and as long as you get enough points you will be OK.
